Ammoniacal Skate Wings

Today, I have had an unnerving cooking experience with some skate.

It seems they utilise urea as part of the skin lubricant to help them glide through the water.

If not iced immediately upon catching, the urea has a tendency to convert to ammonia.

This is rather ruinous to the enjoyment of the cooked fish.

That's only good for cooking with.

He won't be able to taste it after the skate.

Freshness seems more important with skate than most other sea fish. There are a lot of tips around as to what to do to get rid of ammonia taint (soaking in water and lemon juice etc), but its probably a fish best left to restaurant chefs and chip shops. It's got a good taste, but it's not worth the risk of buying a bit of skate which needs remedial treatment. I've seen fishermen catch one, immediately remove the 'wings' and sling the rest into the sea. The wings go straight into a bucket of water and presumably get eaten that same day.

Skate (Wings) MUST be eaten fresh!

If buying from a supermarket "Fish" Department, smell the damned stuff!

Slightly off skate (Bottom feeder) can make you very ill indeed.

One of my neighbours used to catch them on his boat and often kindly gave me some.

Washed and straight in the freezer: caught that day- gutted- washed-cleaned-frozen.

Grill them, covered in butter: then serve with a black butter caper sauce, gently sautéed potatoes, with garlic and oregano and something like brocolli, cooked al denté.

Decent drop of cool white wine: San Veran, a good Orvieto, a young white from Alsace, whatever. Must be crisp and fruity: and not over-chilled as this kills the essential fruity bouquet.

Delicious!
